Yummy quick chicken dish! If you use chicken thighs, they come out much juicier, but breasts work too. You can also make this with boneless pork. The key to this recipe is the salad dressing. Works better than my Aroma rice cooker (no burnt rice), and done in 10 minutes. Following recommended time from Kuhn Rikon, this worked perfectly for me. It will keep my dog happy, as she thinks plain rice with "chicken broth gravy" makes her dry dog food gourmet. It will also serve us anytime we need "cooked rice." -- posted by KateL

Turkey Mushroom Meatballs on Simply Recipes

My father stopped by today to say hello. I offered him lunch which he declined but he did take me up on the offer to try one of these meatballs. One bite and two wide eyes later, “Wow, why didn’t you tell me they were good?” Lunch served.

This is the joy of cooking, isn’t it? Making our loved ones happy? We had a close call with dad last week which involved several days at the hospital and the acquisition of a nifty gadget called a pacemaker. All is well and good now. Let’s just say that every day we get to eat with our families is a blessed one.

This goes great with my Baked Mexican Chicken Thighs. Start the rice after the chicken is in the oven, make a salad, and dinner will be ready within an hour. If you prefer to use brown rice, just adjust the cooking time according to the recommended time on the rice package. -- posted by cathyfood

This recipe is from The Winchester Star newspaper, Winchester, Virginia, from about 1995. This dish has the flavors of chili rellenos, without trouble of stuffing, dipping in batter, and frying, and a lot less fat! It's great as a side dish with tacos or mexican chicken. I have served it cut in 1" squares as an appetizer at a party, and it was a hit! I often double it, bake in a 9 X 13 pan, and take to covered dish suppers. If you wish to use fresh chilis, use 3 large mild banana peppers or anaheim chilis, roasted, peeled and seeded. -- posted by cathyfood
