| Chicken Cacciatore over Angel Hair Pasta Aglio Olio Posted: 28 Jul 2013 10:18 AM PDT An Italian-American Comfort Food. Pan seared seasoned chicken braised in a light tomato sauce with peppers, onions and herbs. To really bump up the flavor of the whole dish I served it over Angel Hair pasta Aglio Olio (garlic and oil). Delish! -- posted by jc12972 |
| Posted: 28 Jul 2013 01:28 PM PDT This is an easy sauce that goes well with chicken, turkey, fish, and pork. It is not a strongly flavored sauce, so it doesn't overpower the meat at all, but it does add nice color and an herb flavor with some sweetness from the cherries. I suggest using thyme sprigs, so they can easily be removed when the sauce is done. I have used agave syrup, and that works too. Frozen cherries work well with this if they are unsweetened. The finished sauce also freezes well. (Use sweet cherries, not pie cherries. I like it made with Bing cherries.) -- posted by Cook In Southwest |

I used full meaty skin on, bone in chicken breasts. I had to improvise, my fresh bacon did not render much fat so I added some fatty thin sliced pancetta and olive oil to make up the difference. The original title to this recipe is 'Chef Don Clark's Coconut Chicken Toston Cup Filling' where you use this recipe as a filling for toston cups which are fried plantain cups made with a plantain press. Use chicken thighs or legs and remove the skin (or simply buy skinless). The original recipe is by Jean Pare, the recipe has been altered to suit my families tastes and our size (we are a family of 6) so it makes lots. So easy and great for those nights where we have sport/school commitments. Serve with rice. -- posted by cookingpompom |
