Habanero-Peach Butter

This recipe makes enough butter to accompany several batches of Caribbean Spiced Mahi Mahi with Habanero-Peach Butter. The butter will keep well refrigerated - just slice off the appropriate amount as you need it. Try it on other dishes; it adds a light spicy and fruity flavor to chicken, pork, and seafood dishes. You can roll any compound butter in plastic wrap and shape it into a tube. After it has been refrigerated, the butter will be hard, and you can then just slice off the amount you need. Fettuccine With Porcini Mushroom Sauce

From Bon Appetit, Keep It Simple Cookbook. I really enjoyed this recipe, but felt that there was too much liquid. Next time I think I would start by reducing the chicken stock by 1/2 cup and add as needed during cooking. I also really liked this recipe because you don't need to rehydrate the porcini mushrooms before cooking. -- posted by lazyme

An easy chicken stock recipe should be part of every home chef's repertoire. Homemade stock can make a noticeable difference in recipe results, perhaps especially with soups. Getting into the habit of making your own stock is fairly simply. You just need to select a time slot when you will be home for a couple of hours. The actual work involved is almost zero. One easy way to ensure that you'll always have homemade chicken stock available is to frequently roast a chicken for dinner. Roast chicken needn't be stuffed and it makes one of the easiest meals in the world. Once again, a dish that requires next to no work, just your presence to make sure things stay on track. A seasoning mix for steaks or to spinkle on beef ribs or hamburgers too! Pretty SPICY, so if you ar a weakling when it mes to spicy food reduce the cayenne or eliminate altogether Great for pork, fish, seafood and chicken! -- posted by Shawn C
