What’s your favorite way to prepare swordfish? Mine is marinated in an herby vinaigrette, and then grilled. Swordfish is a sturdy fish. It holds up like steak when you cook it, and like beef, takes well to marinating. A quick and easy marinade is just a bottle of your favorite Italian dressing. Or if you, like me, prefer to make your dressings and marinades from scratch, here’s a lovely Greek-inspired vinaigrette with which to marinate the swordfish. It’s made with fresh lemon juice, olive oil, garlic, oregano and thyme.

A Yummy Chicken Noodle Soup (8-Qt. Pressure Cooker)

This cold chaser has been adapted from a Bon Appetit recipe. This amount of chicken needs an 8-quart or larger pressure cooker (stove top or electric). Check how much chicken your pressure cooker manual says your pot can handle for chicken broth/stock before you start. (Chicken stock lasts 3 days in the refrigerator or 3 months in the freezer.) You can always pressure cook some additional chicken (and carrots) while the big batch of broth is cooling (I like Recipe#369106, which works well in a 2-qt. p.c.) For the Noodle Soup stage, make only as many noodles as you plan to serve at that meal. (Prep time includes time to cool down broth and chill for fat removal.) Yes, this is time-consuming, but making your own broth maximizes the health benefits. These ingredients escort phlegm from the body! And when you have a cold, the only thing that tastes truly good is good chicken soup. When I make this for you, it says I love you and care for you very much. -- posted by KateL

A word from America's Test Kitchen: "Chile con queso has fallen on hard times; often it’s just Ro‐tel diced tomatoes and chiles mixed with Velveeta, microwaved, and stirred. We wanted to keep the simplicity but ditch the plasticky flavor and waxy texture. We started with a base of chicken broth, cream cheese, and cornstarch to help stabilize the cheese and prevent it from breaking. For the cheeses, we chose Monterey Jack for its great flavor and American cheese for its superior meltability. We kept the classic Ro‐tel tomatoes but bumped up their flavor even more with garlic and canned chipotle chile." Everyone loves a good Asian noodle salad, right? How do you like yours? I like mine with lots of colorful veggies tossed in with the noodles, so it feels more like a “salad” and not just highly seasoned cold noodles. Nothing wrong with plain noodles, mind you! In fact, the beauty of this salad is its flexibility. Add as many or as few extras as you want. I love the colors and crunch of purple cabbage and red bell peppers so they’re in, along with carrots and steamed broccoli.
