Sweet Potato for Two

Sweet potatoes are so underrated. They are so good for you and packed with fiber. I got tired of not being able to find a sweet potato recipe that is good for you and for 2 people. So I made this one night and it was delicious. Its easy and delicious. Goes great with seasoned baked chicken. -- posted by Litl Irish Angel

Making this is a process but is SO worth the end result. Use boneless skinless chicken thighs (I have used breast). Use 1.5 to 2 inch red potatoes. -- posted by Chef #255298

"Better Than Bouillon" Gravy

I found this recipe on youtube......For times when you don't have meat drippings, this makes a nice, smooth gravy without all the "junk" added to jar gravy or gravy mixes. (I like to make the beef gravy, then heat meatballs in it, and add a little sour cream for a nice "comfort food" to serve over noodles.) "Better than Bouillon" can be found in your grocery near the soup bases or the chicken or beef broth. -- posted by Treewoman

Beef Whole Grain Soup

This was made with Healthy Expectations Black and Tan Whole Grain Medley, which is hull-less barley, black barley, daikon seed, and dehydrated vegetables. I made this on the stove top, but it might be better in the crockpot, on low 6-8 hours. I used the leftover meat I had, which was rabbit. If the meat is not already seasoned, some garlic and pepper might be needed. I think chicken might be too bland. I used 1/2 a raw sweet potato, chopped, in place of the vegetables. -- posted by sheepdoc

Chicken Piccata Pasta

I came up with this recipe while contemplating what to do with leftover chicken. It turned out so good, I had to post it to preserve it. I didn't add all of the cooked pasta to the pan so I could preserve some for kids, and because I like a lot of sauce to cover my noodles. -- posted by Cooks4_6
