Do you like buckwheat? When I lived in Japan I used to eat buckwheat soba noodles all the time, and a few years ago I started making buckwheat pancakes which have become a favorite. The taste is a little bit like whole wheat or whole grain versus white flour, but not wheat-y. Buckwheat isn’t actually grain—it isn’t a grass, but a plant that produces seeds that are used like wheat, hence the name. It is completely gluten-free. So if you are trying to avoid gluten for any reason (my mother and I are a bit sensitive to gluten), buckwheat is a great option.

Chicken Stir Fry

I wouldn't exactly call this a typical stir fry. I normally don't use canned mushrooms, but in this instance I did. and the sweet chili sauce definetely gives it a new twist to the stir fry that we all know, although it does work very well, in this instance. Cook time includes the cooking of the chicken before adding it to the stir fry, even though I didn't mention this in the instructions. This is truly an international take on the classic quesadilla, filled with some of my favorite things! Throwing caution to the wind, its a blend of French, Asian and Carribean ingredients with a nod to the humble yet grand quesadilla. To keep the ingredient list and directions short, I've used store-bought crepes. But crepes are really quick and easy to make - so do yourself a favor and use one of the many great crepe recipes on this site! My personal preference for the cheese is brie (soooo good with the sweet sauce!) but Mozzarella is probably really good,too! This recipe was created for Raiders of the Lost Pantry game, 2013. Time does not include cooking the chicken filet. As an appetizer, these can be made in advance of your party and pan-toasted at the last minute............. "I originally came up with this recipe after making Balsamic Roasted Brussels Sprouts 1001 times in the cafe. I was bored with it and decided to "gourmet it up" a bit.. So I made Cranberry Pistachio Pine Nut Pesto to put on them. DELICIOUS!
