Ancho Orange Roast Chicken

This produces a wonderfully tasty and beautiful roast chicken. It is not really spicy from the ancho, just incredibly floral and flavorful. I think it is company-worthy. The prep time includes marinating time. -- posted by under12parsecs

Corndog Chicken Bites

My wife and I were making Doritos Crusted Chicken (http://www.theblackpeppercorn.com/2013/04/doritos-crusted-chicken-fingers/) the other night when we ran out of Doritos and still had some chicken left over. So we pulled out some Fritos and crushed them and completed the recipe. We discovered that when served with yellow mustard these little gems taste like a chicken corndog. We actually liked our Frito bites over the Doritos bite. -- posted by ScoutDad450

Barbecue Chicken-Cheddar Quesadillas

This is an easy, delicious quesadilla recipe that is not only sure to please the kiddos but the adults as well. I prefer the fold-in-half method of quesadilla assembly for ease of turning in the skillet with less risk of the innards spilling out. This recipe calls for whole wheat tortillas, but corn or another variety of tortilla could be substituted. Also, I prefer to bake the chicken cutlets in barbecue sauce, but they could also be marinated and grilled (just be sure to have extra barbecue sauce on hand for quesadilla assembly!). Grilled Triple Cheese and Bacon Stuffed Pork Chops

My DH raved about these chops calling them "EPIC", and they now supersede his 2 other most favorite meals that I prepare which are my baked chicken Parmesan and my mom's lasagna recipe. He claims they can stand up in any fancy restaurant as their house specialty and that they would get away with charging well over $50 per meal...then again he does have to still live with me after he eats it..so he could be slightly over exaggerating! LOL I presented these along side a tossed Caesar Salad and a serving of Tender Field Peas with Snap Beans. Hope you enjoy! -- posted by LKAFraz
