Posted: 03 Sep 2013 07:53 AM PDT Being Southern, I've always loved fried chicken, but since I have been on the first phase of the Atkins diet, I have been unable to use much of anything for a flour substitute. However, I discovered that, because French fried onions have so few carbs, I can have them on Induction, so I came up with the idea to grind them down and use them as a coating for fried chicken. My father suggested to add a little Parmesan cheese to it, which helps solidify it and helps it cling better to the chicken. Honestly, it came out much better than I expected and it actually worked better for me than normal flour, which tends to fall off during the frying process.
