Easy Barbecue Chicken Patties

Posted: 04 Sep 2013 02:42 PM PDT

Wanted something different than a chicken parmesan or a boring sandwich to use with some chicken patties I had in the freezer. Came up with this super easy, kid approved idea. Served with potato salad and it feels like a picnic! -- posted by jessiethebestie

All-Purpose Barbecue Rub

This can be used on ribs (spare or baby back), pork, or chicken. My husband also likes it on popcorn. If you would like less heat, you can omit the cayenne pepper. If you would like no heat at all, also omit the ground chipotle pepper. If you choose to use regular salt instead of kosher salt, decrease the amount of salt to 1 1/2 tablespoons. The pepper does not have to be freshly ground, but the Food.com brain won't let me enter it in any other way. So just know that you can use store-bought coarse ground pepper - that's what I do. -- posted by xtine

Chicken Neapolian from TOH

An easy and tasty dinner served over noodles, this moist chicken with a flavorful sauce sure to please, received from Taste of Home on line and my family loves it. My DH made this for us and insisted on cutting the chicken into chunks to speed cooking time and that worked good for us -- posted by Bonnie G #2
