This is a copycat recipe of Popeye's Popcorn Shrimp and Chicken (Tender, crispy shrimp and chicken seasoned in Louisiana herbs and spices then served up crispy). For spicy, double the cayenne pepper and for cajun, add the cajun seasoning. -- posted by Celticevergreen

Biscuit Topped Chicken and Broccoli Casserole

This is a result of a frig, freezer, and pantry treasure hunt. I like to cook chicken tenderloins ahead and freeze them so they are ready whenever I want to throw a casserole together. The tenders were joined by some broccoli and onions.The sauce used cream of chicken soup as a base and included some sharp cheddar and a dash of Tabasco Sauce. Refrigerated biscuits created a puffy crust. A hearty casserole without a trip to the store! -- posted by Mama D
