Posted: 14 Oct 2013 01:39 PM PDT This is a personal tweak on the Campbell's recipe for Chicken Enchiladas. This does make (2) 13X9 pans of good homemade enchiladas, one to eat and one to save for later. For the most part you can give or take on the measurements of the ingredients like more cheese less picante sauce, its all up to you and your family's taste. And I chose to use enchilada sauce on one pan and the remaining filling on the other. In the future I would only top them with enchilada sauce as my family liked that pan better. This is a really large recipe, so feel free to tone it down, I always end up making way too much of something because we always like leftovers, they sure don't hurt a budget. Cheesey Cashew Potato Brocolli Cakes/Patties Posted: 14 Oct 2013 02:27 PM PDT A good way to use up left over mash.These cakes freeze well and can also be adjusted to suit your taste or what you have on hand.e.g you could add grated carrot,corn ,pepper, chilli etc.You could also use Italian seasoning instead of cayenne or even add cooked chicken and cook in larger muffin trays for a healthy hand held pie. -- posted by Moll Moll |

Quinoa Guacamole Chicken Wraps Posted: 16 Oct 2013 10:27 AM PDT So, I got home from the gym one day and thought, I want to eat something healthy. Red quinoa ? Check. Then I thought, I want it to taste really good. Avocado, red onion, cherry tomato, olive oil? Check. I added a little bit of balsamic vinegar to the quinoa and then mixed it in with the guacamole, and the combination turned into this texture-rich, super flavorful, smooth paste that was so delicious I didn't want it to end. I thought, man, this would be great in a wrap! So I added in some lean white chicken breast and low carbohydrate wraps, and was hooked. -- posted by Anastasia G. |
