My Old-Fashioned Simple & Easy Fantastic Fried Chicken

Posted: 28 Aug 2013 02:39 PM PDT

This a recipe that's very similar to many fine fried chicken, but on so many recipes they leave out what I think are two very important steps in the cooking of it. Start cooking from largest to smallest. Space. We all need it. Don't over-crowd. This is an old-fashioned, no frills, nothing fancy but dang good chicken recipe. Flour and seasoning amounts can easily be doubled or whatever to adapt to the size/amount of the chicken you cook. -- posted by Iowahorse

Blackened Chicken Sandwich With Cajun Slaw

Spicy chicken with a cooling slaw topping. The original recipes says it serves 4, but I think since the breasts are cut in half, it probably serves more. Roasted Garlic and Herb Potato Gratin

Posted: 29 Aug 2013 05:27 AM PDT

When the menu calls for warm and cozy comfort food that's just a little different, try this roasted garlic and herb potato gratin recipe. Just a shade off of the traditional potato gratin, this casserole showcases surprisingly mellow roasted garlic, an herb-laced cream sauce, and Gouda cheese. This herbed potato gratin goes well with roast chicken or beef dishes and is a must-have accompaniment for big, family meals. -- posted by CHEF GRPA
