Grill season is officially upon us. Well, it's been upon us for a while...some days better tha others for grilling. I'm thinking the last "really cold" front has passed through and we've been enjoying some lovely weather as a result. This weekend we had my sister and her family over for dinner...we grilled out, ate on the deck and had a lovely evening hanging out. My husband grilled the chicken that I had marinated in the Hidden Valley Pomegranate Vinaigrette Dressing while I prepared the Mango BBQ Sauce on the stove and mixed up the salad...and watched everyone devour the homemade guacamole that my brother-in-law made for us all! A few notes about how to keep this meal on the inexpensive side...Chicken breast price - don't pay more than $1.99/pound! Meat is so expensive, so following the sale cycles and buying only when it's on sale is crucial to keeping meal and overall grocery costs down! BBQ Sauce - it's the time of year when the coupons for BBQ sauce are a plenty...and the sales are too! Be sure to use the coupon when the BBQ sauce is on sale for double whammy savings! In Thailand, green papaya salad is called som tum, with “som” meaning “sour” and “tum” referring to the pounding sound of the large pestle used to crush ingredients. It is eaten by itself as a snack, or with marinated grilled beef and chicken. In the middle of a hot afternoon, green papaya salad wakes you up with the sour and the spicy. In Laos and Thailand, there is always a vendor selling green papaya salad. The most important flavor for Lao green papaya salad is the heat from chilies. Everything else is there to balance it out. Also known as “Pollo Estofado” this stewed chicken recipe is Spanish in origin. The chicken is marinated overnight in a spicy vinaigrette with olives and raisins. The chicken is then cooked in its marinade with the addition of wine and brown sugar. Excellent with Spanish rice. The recipe comes from one my mother clipped from the Sacramento Bee in 1984.

Friends and family ask me for this recipe all the time and my husband has affectionately named it "Butter Magic." It's quick, simple, and what the old folks used to call LARRUPIN' GOOD (as in "so tasty it makes your tongue slap your brains out!") I originally created this sauce to brush on corn on the cob, but we quickly discovered it's great on any kind of veggies, potatoes, fish, shrimp, lobster, scallops, chicken, bread and popcorn.
